  • 1 cup (240 ml) espresso or strong brewed coffee, hot
  • 1 cup (240 ml) milk of choice (whole, oat, almond, or preferred milk)
  • ¼ cup (60 ml) pumpkin puree (canned or homemade, smooth texture)
  • 2 tablespoons (30 ml) maple syrup or honey
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground ginger (optional)
  • ½ teaspoon vanilla extract (8 ml)
  • ¼ cup (60 ml) heavy cream or coconut cream (can substitute with aquafaba for vegan option)
  • Pinch of salt

Instructions

  1. Brew 1 cup (240 ml) of strong espresso or coffee. Pour into a heatproof mug and set aside.
  2. In a small saucepan, combine 1 cup (240 ml) milk, ¼ cup (60 ml) pumpkin puree, 2 tablespoons (30 ml) maple syrup or honey, ½ teaspoon cinnamon, ¼ teaspoon nutmeg, ⅛ teaspoon ground ginger, ½ teaspoon vanilla extract, and a pinch of salt. Heat gently over medium-low heat, stirring constantly, until warm but not boiling (around 140°F / 60°C).
  3. Sprinkle 1 teaspoon activated charcoal powder into the brewed coffee. Stir briskly until fully dissolved and the coffee turns deep black.
  4. Remove the saucepan from heat. Add ¼ cup (60 ml) heavy cream or coconut cream to the warm pumpkin milk mixture. Froth the mixture using a milk frother, handheld electric whisk, or blender until it doubles in volume and forms soft peaks.
  5. Slowly pour the black charcoal coffee into your serving glass if brewed separately. Gently spoon or pour the spiced pumpkin foam over the top to create a layered effect.
  6. Dust the top with a pinch of cinnamon or a light sprinkle of nutmeg. Serve immediately while warm. Optionally, add a cinnamon stick for stirring.

Notes

Avoid overheating the milk and pumpkin mixture to prevent burnt taste or curdling. Whisk foam vigorously for best texture; add more cream if foam is too thin. Sieve charcoal powder if clumpy. Use food-grade activated charcoal only. Clean frother immediately to avoid staining. For vegan option, use coconut cream and maple syrup. Serve foam fresh for best texture; re-froth if stored.
