  • 1 cup (150 g) frozen mixed berries (blueberries, raspberries, strawberries)
  • 1/4 cup (50 g) granulated sugar
  • 1 packet (7 g) unflavored gelatin powder
  • 1/4 cup (60 ml) vodka or clear spirit (optional)
  • Lemonade Layer:
  • 1 cup (240 ml) lemonade (homemade or store-bought)
  • 1 packet (7 g) unflavored gelatin powder
  • 1/4 cup (60 ml) vodka or clear spirit (optional)
  • 1 tablespoon (12 g) sugar (adjust to taste)
  • Additional:
  • Cooking spray or neutral oil (for greasing cups)
  • Clear plastic or glass cups, 2–3 oz size

Instructions

  1. Prepare the Berry Layer: In a medium saucepan, combine 1 cup (240 ml) water, frozen berries, and sugar. Warm over medium heat until the berries soften and sugar dissolves, about 5 minutes. Use a fork or potato masher to gently crush berries, releasing juices.
  2. Dissolve Gelatin: Sprinkle 1 packet (7 g) gelatin evenly over 1/4 cup (60 ml) cold water in a small bowl. Let it bloom for 5 minutes, then stir into the warm berry mixture until completely dissolved.
  3. Add Vodka (Optional): Remove from heat and stir in 1/4 cup (60 ml) vodka if using. Let cool slightly (10 minutes) so it’s warm but not hot.
  4. Pour First Layer: Lightly grease your shot cups with cooking spray or oil to help unmold later if desired. Pour berry mixture evenly into cups, filling about one-third full (approximately 1 oz / 30 ml). Refrigerate for 30–40 minutes until firm but slightly tacky to touch.
  5. Prepare Lemonade Layer: While berry layer chills, warm 1 cup (240 ml) lemonade with 1 tablespoon (12 g) sugar over low heat until sugar dissolves. Bloom 1 packet (7 g) gelatin in 1/4 cup (60 ml) cold water for 5 minutes, then stir into warm lemonade until dissolved. Remove from heat, add vodka if used, and cool for 10 minutes.
  6. Pour Lemonade Layer: Once berry layer is set but tacky, gently pour lemonade mixture over it to create the white layer. Fill another third of the cup (~1 oz / 30 ml). Return to fridge for 30–40 minutes until set.
  7. Repeat Berry Layer: Pour remaining berry mixture on top for the final red layer, filling the cups to the top. Chill for at least 1 hour until fully set.
  8. Serve: Keep refrigerated until ready to enjoy. Optionally, garnish with a fresh berry or a small lemon wedge on the rim for extra flair.

Notes

Bloom gelatin properly by sprinkling over cold water and letting it sit for 5 minutes before dissolving to avoid grainy texture. Pour each layer when cool but still liquid to prevent melting previous layers. Chill layers on the fridge’s middle shelf for even cooling. Use a spoon or pour slowly down the side of the cup to keep layers distinct. For non-alcoholic version, omit vodka and add sparkling water or lemon-lime soda. Fresh berries can replace frozen with slight water adjustment. Silicone cups can be used for easy unmolding.
