  • 1 cup (240 ml) boiling water
  • ½ cup (120 ml) cold water
  • ½ cup (120 ml) vodka or preferred spirit
  • About 1 small packet Pop Rocks candy per 12 jello shots (complementary flavor like strawberry or watermelon)
  • Non-stick spray or oil for greasing molds
  • 1 tablespoon sugar (optional, for rimming)

Instructions

  1. Pour 1 cup (240 ml) boiling water into a heatproof mixing bowl containing the gelatin powder. Stir vigorously for about 2 minutes until completely dissolved with no granules visible.
  2. Stir in ½ cup (120 ml) cold water to cool the mixture slightly. Then add ½ cup (120 ml) vodka or your chosen spirit. Mix gently but thoroughly to combine without creating bubbles.
  3. Lightly grease the inside of your shot glasses or molds with non-stick spray or a thin layer of oil. Arrange them on a tray for stability.
  4. Carefully fill each shot glass or mold about ¾ full with the jello mixture (approximately 1.5 ounces or 45 ml per shot).
  5. Place the tray in the refrigerator and chill for at least 3-4 hours, preferably overnight, until firm but still slightly jiggly.
  6. Just before serving, moisten the rim of each jello shot with a bit of water or leftover spirit. Dip into a small plate of sugar (optional), then immediately into a plate of Pop Rocks candy to coat the rim.
  7. Arrange the shots on a festive tray and serve immediately, encouraging guests to eat the rim first to enjoy the popping effect.

Notes

Apply Pop Rocks just before serving to maintain fizz. Use high-quality gelatin for clearer shots. Adjust alcohol quantity to reduce booziness.
