  • 1 cup granulated sugar (200 grams)
  • Zest of 1 medium lemon (about 1 teaspoon)
  • 2 tablespoons fresh lemon juice (30 ml)
  • 1/4 cup water (60 ml)
  • 1 teaspoon butter (optional, for finishing)

Instructions

  1. Rinse the wild huckleberries gently under cold water and drain well. If using frozen berries, thaw fully and drain excess liquid. Zest one lemon carefully, avoiding the bitter white pith, then squeeze out 2 tablespoons of fresh lemon juice. Set aside.
  2. In a medium heavy-bottomed saucepan, add the huckleberries, sugar, lemon zest, lemon juice, and water. Stir gently to combine. Let the mixture sit for about 10 minutes to macerate.
  3. Place the pan over medium heat and bring to a gentle boil, stirring frequently. Once boiling, reduce heat to medium-low and simmer uncovered, stirring every 2-3 minutes to prevent sticking. Cook for 20-25 minutes until berries break down and liquid thickens.
  4. Test for thickness by placing a small spoonful on a chilled plate. Let cool for a minute, then push with your finger. If it wrinkles and doesn’t run, the jam is ready; if runny, continue simmering and test every 5 minutes.
  5. Stir in 1 teaspoon of butter to reduce foaming and give the jam a glossy finish. Remove from heat.
  6. Let the jam cool for about 10 minutes in the pan, then carefully transfer to clean glass jars, leaving some headspace. Seal and refrigerate. The jam will thicken further as it cools.

Use fresh lemon zest and juice for natural pectin and brightness. Stir gently to avoid mashing berries too much. Test jam thickness on a chilled plate. Butter reduces foaming.
