Instructions

  1. Lay out one large flour tortilla flat on a clean cutting board, ensuring it is completely thawed if previously frozen.
  2. Spread about 2 tablespoons (30 ml) of ranch dressing evenly over the entire tortilla surface, leaving a small border around the edges.
  3. Arrange 6-8 thin slices of deli turkey evenly on top of the ranch spread, overlapping slightly.
  4. Sprinkle about 1/4 cup (30 g) shredded cheddar cheese evenly over the turkey, then layer a few fresh spinach leaves on top if using.
  5. Starting from one edge, roll the tortilla into a tight log, keeping the filling packed and the roll firm. Warm the tortilla for 10 seconds in the microwave if it resists rolling.
  6. Wrap the roll tightly in plastic wrap or parchment paper and refrigerate for at least 15 minutes to firm up the roll.
  7. Using a sharp knife, slice the roll into 1-inch (2.5 cm) thick pinwheels, aiming for about 8 pinwheels per roll.
