  • 68 ounces deli turkey slices (oven-roasted or honey-roasted)
  • 46 slices provolone cheese
  • 4 ounces plain cream cheese, softened
  • 1 tablespoon Dijon mustard

  • Optional: 2 tablespoons shredded carrots
  • Optional: a few slices thinly sliced cucumber
  • Optional: 2 tablespoons roasted red peppers, chopped

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 15 minutes before starting, or microwave for 10-15 seconds until soft and spreadable.
  2. Mix the spread: In a small bowl, combine softened cream cheese and Dijon mustard. Stir until smooth and well combined.
  3. Prepare your tortilla: Lay one large flour tortilla flat on a cutting board. If stiff, microwave for 10 seconds to make pliable.
  4. Spread the cream cheese mixture: Using an offset spatula or butter knife, spread an even, thin layer over the entire tortilla, leaving a half-inch border around edges.
  5. Layer the turkey: Place 3-4 slices of deli turkey evenly over the cream cheese, overlapping slightly, leaving the half-inch border.
  6. Add the cheese: Lay 2-3 slices of provolone cheese over the turkey, overlapping slightly.
  7. Add optional fillings: If using, sprinkle spinach, carrots, cucumber, or roasted red peppers evenly over the cheese. Do not overstuff.
  8. Roll it up tightly: Starting from one edge, carefully roll the tortilla into a tight log, keeping filling in place. Roll as tightly as possible without tearing.
  9. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or parchment paper, twisting ends like a candy wrapper. Refrigerate for at least 30 minutes.
  10. Slice into pinwheels: After chilling, unwrap and place on cutting board. Using a sharp knife, slice into 1-inch thick rounds using a gentle sawing motion. Wipe knife clean between slices.
  11. Secure with toothpicks (optional): Insert a toothpick through each pinwheel to prevent unrolling in lunchbox.
  12. Pack and serve: Arrange pinwheels in a lunchbox or serving platter. Serve cold or at room temperature.
