A quick, flavorful, and healthy skillet meal combining spicy ground turkey with naturally sweet diced sweet potatoes, perfect for busy weeknights.

Ingredients

Scale
  • 1 lb ground turkey (lean)
  • 2 medium sweet potatoes, peeled and diced into ½-inch cubes
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 medium bell pepper, diced (red or orange preferred)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ¼ to ½ teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • A handful fresh cilantro, chopped (optional)
  • Lime wedges, for serving

Instructions

  1. Peel and dice two medium sweet potatoes into roughly ½-inch cubes. Set aside.
  2. Heat a large skillet over medium heat and add 2 tablespoons olive oil. Warm for about 1 minute until shimmering.
  3. Add diced yellow onion and cook for about 3 minutes until translucent and soft.
  4. Stir in minced garlic and diced bell pepper; cook another 2-3 minutes until fragrant and slightly tender.
  5. Add diced sweet potatoes to the skillet, stirring to coat with oil and aromatics. Spread out and cook undisturbed for about 4 minutes to sear, then stir and cook for another 6-8 minutes until tender. Cover loosely if needed to steam, removing lid near the end to brown.
  6. Push sweet potatoes and veggies to the side of the pan. Add ground turkey to cleared space, break it up, and cook about 5 minutes until browned and no pink remains.
  7. Sprinkle in smoked paprika, chili powder, ground cumin, cayenne pepper, salt, and black pepper. Stir to coat turkey and veggies evenly.
  8. Reduce heat to low and simmer for 2-3 minutes to let flavors meld. Taste and adjust seasoning if needed.
  9. Remove from heat, sprinkle chopped cilantro on top, and serve with lime wedges.

Notes

Add a splash of water or broth if sweet potatoes seem dry during cooking. Adjust cayenne pepper to control heat. Fresh cilantro and lime wedges brighten the dish at the end. For dairy-free, skip cheese garnishes or add avocado. Frozen bell peppers can substitute fresh. Black beans or corn can be added for extra protein and texture.
