  • 2 large bell peppers (mix of colors, e.g., red and yellow)
  • 1 large red onion
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste
  • 810 wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Preheat your grill or grill pan to medium-high heat (about 400°F or 200°C).
  3. Slice the smoked sausage into 1-inch thick rounds (or on a slight diagonal for more surface area).
  4. Core and deseed the bell peppers, then cut them into 1-inch square pieces. Peel the red onion, cut into wedges, and separate into chunks of similar size.
  5. In a large bowl, combine the sliced sausage, pepper chunks, and onion pieces. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, dried oregano, salt, and pepper. Toss until evenly coated.
  6. Thread the sausage and vegetables onto the skewers, alternating between pieces. Leave a little space between each piece for even cooking.
  7. Place the skewers on the preheated grill or grill pan. Cook for 4-5 minutes per side, turning once, until the sausage is nicely charred and the peppers are softened with some blackened spots (total about 8-10 minutes).
  8. Remove from the grill and let rest for 2-3 minutes before serving. Serve hot.

Notes

For oven method: Preheat to 425°F (220°C), bake skewers on a lined baking sheet for 20-25 minutes, turning halfway. For extra color, broil for the last 2-3 minutes. Don’t overcrowd the grill; cook in batches if needed. Let ingredients sit at room temperature for 10-15 minutes before grilling for even cooking.
