Easy Slow Cooker Lasagna Soup with Ricotta Dollops

This slow cooker lasagna soup delivers all the rich, meaty flavor of classic lasagna with minimal effort. Creamy ricotta dollops melt into the savory tomato broth, creating a comforting bowl of cheesy goodness.

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef (85/15)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups low-sodium beef broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 8 ounces dried lasagna noodles, broken into small pieces
  • 1 cup whole milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • Fresh mozzarella pearls or shredded mozzarella (for garnish, optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook until softened, about 4-5 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground beef, salt, and pepper. Cook, breaking up the meat, until no longer pink. Drain excess fat.
  3. Add dried oregano, dried basil, and red pepper flakes (if using). Stir and cook for 1 minute. Stir in tomato paste and cook for another minute, scraping the bottom of the pan.
  4. Transfer meat mixture to a 6-quart or larger slow cooker. Add crushed tomatoes, tomato sauce, beef broth, and sugar. Stir to combine.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  6. About 20 minutes before serving, bring a large pot of salted water to a boil. Cook broken lasagna noodles according to package directions until al dente. Drain and set aside.
  7. In a small bowl, combine ricotta cheese, grated Parmesan, and fresh parsley. Stir until smooth. Season with a pinch of salt and pepper.
  8. To serve, place a small handful of cooked noodles in each bowl. Ladle hot soup over the top. Add a generous dollop of ricotta mixture in the center. Garnish with fresh mozzarella if desired.
  9. Serve immediately with crusty bread.

Notes

Cook pasta separately and add to each bowl to prevent mushiness. Use full-fat ricotta for best creaminess. Store soup and pasta separately for leftovers.
