These Easy Slow Cooker Buffalo Chicken Sliders for Game Day are the perfect party food. Tender, spicy, buttery chicken is slow-cooked to perfection, then piled onto soft slider buns with ranch or blue cheese dressing for a crowd-pleasing appetizer or main dish that disappears before halftime.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts (about 4 medium breasts)
  • 1 cup buffalo wing sauce (preferably Frank’s RedHot Original)
  • 1/4 cup unsalted butter, melted
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 tablespoon brown sugar (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 12 slider buns (preferably Hawaiian rolls)
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1/2 cup crumbled blue cheese (optional)
  • Pickle slices (optional)
  • 2 tablespoons softened butter for toasting buns

Instructions

  1. Prep the chicken (5 minutes): Place the chicken breasts in your slow cooker. Trim off any visible fat or weird bits.
  2. Make the sauce (2 minutes): In a small bowl, whisk together the buffalo wing sauce, melted butter, ranch seasoning mix, brown sugar (if using), garlic powder, and black pepper. Pour this mixture evenly over the chicken in the slow cooker.
  3. Cook low and slow (4-5 hours on LOW or 2-3 hours on HIGH): Put the lid on and let the magic happen. I prefer cooking on LOW—the chicken gets more tender and the flavors have time to really meld.
  4. Shred the chicken (5 minutes): When the chicken is fork-tender (it should shred with almost no effort), transfer it to a cutting board or large bowl. Use two forks to shred it into bite-sized pieces. Don’t shred it too fine—you want some texture.
  5. Toss with extra sauce (2 minutes): Return the shredded chicken to the slow cooker and stir it around in all that glorious sauce. Let it sit on WARM for 10-15 minutes so it soaks up even more flavor.
  6. Toast the buns (5 minutes): Split your slider buns in half and place them cut-side up on a baking sheet. Brush the cut sides with softened butter. Broil on HIGH for 1-2 minutes until golden brown and toasty. Watch them carefully—they go from perfect to burnt in seconds.
  7. Assemble the sliders (5 minutes): Pile the buffalo chicken generously onto the bottom half of each toasted bun. Drizzle with ranch or blue cheese dressing. Add crumbled blue cheese and pickle slices if you’re using them. Top with the other half of the bun and press down gently.
  8. Serve immediately: These are best enjoyed warm, right after assembly. If you’re serving a crowd, keep the shredded chicken warm in the slow cooker on the WARM setting and let people build their own sliders.

Notes

Don’t overcook the chicken. Toast your buns to prevent sogginess. Adjust the heat to your crowd. Shred while warm. Double the recipe for a crowd. Leftover shredded buffalo chicken can be stored in an airtight container in the refrigerator for up to 4 days. Freezes well for up to 3 months.
