  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup chopped green onions (for garnish)
  • Optional: 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder

Instructions

  1. Cook the chicken: Place the 2 pounds of boneless skinless chicken breasts in the slow cooker. Season lightly with salt and pepper. Pour 1/4 cup of the hot sauce over the chicken. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken is tender and shreds easily with a fork. The internal temperature should reach 165°F. If using rotisserie chicken, skip this step and add the shredded chicken later.
  2. Shred the chicken: Remove the cooked chicken from the slow cooker and place it on a cutting board or in a large bowl. Use two forks to shred it, or use a hand mixer on low speed for a quicker method. Be careful not to over-shred—you want nice bite-sized pieces, not mush. Drain any excess liquid from the slow cooker, leaving about 2 tablespoons behind for moisture.
  3. Add the cream cheese: Return the shredded chicken to the slow cooker. Add the cubed cream cheese, the remaining 1/4 cup hot sauce, the ranch dressing, and the ranch seasoning mix. Stir everything together until the cream cheese starts to soften and combine. It will look a little lumpy at first—that is normal.
  4. Cook the dip: Cover the slow cooker and cook on LOW for 1 to 2 hours, stirring occasionally, until the cream cheese is fully melted and the dip is smooth and creamy. Stir every 30 minutes if you can, but do not stress if you forget. The dip will still turn out fine.
  5. Add the cheese: Once the dip is smooth, stir in the shredded cheddar cheese. Cover and cook for another 15 to 20 minutes until the cheese is melted and the dip is hot and bubbly. Stir well to incorporate the cheese evenly.
  6. Taste and adjust: Give the dip a taste. Need more heat? Add another tablespoon of hot sauce. Want it creamier? Stir in an extra splash of ranch dressing. This is your dip—make it your own.
  7. Garnish and serve: Sprinkle the chopped green onions over the top for a fresh finish. Switch the slow cooker to the WARM setting and serve directly from the pot with tortilla chips, celery sticks, carrot sticks, or pretzel bites.
