  • 1.5 pounds Italian sausage links (about 56 links)
  • 3 large bell peppers (mixed colors), sliced into 1-inch strips
  • 1 large red onion, sliced into ½-inch half-moons
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon red pepper flakes (or to taste)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Position rack in center. Line a large rimmed sheet pan with parchment paper or foil.
  2. Wash and dry bell peppers. Cut each in half through the stem, remove seeds and membranes, then slice into 1-inch wide strips. Cut red onion in half through root end, peel, then slice into ½-inch thick half-moons.
  3. In a large mixing bowl, combine sliced peppers and onions. Drizzle with olive oil and sprinkle with oregano, garlic powder, red pepper flakes, salt, and black pepper. Toss until evenly coated.
  4. Spread seasoned vegetables in an even layer on prepared sheet pan. If using a wire rack, place it on top of the vegetables.
  5. Prick each sausage link 3-4 times with a fork. Place sausages on the wire rack (or directly on vegetables) spaced evenly apart.
  6. Roast for 20-25 minutes. After 15 minutes, if not using a wire rack, flip sausages and stir vegetables. If using a rack, rotate the pan. Continue roasting until sausages are golden brown and reach internal temperature of 160°F (71°C), and peppers are tender with charred edges.
  7. Remove from oven and let rest for 5 minutes. Transfer sausages to a cutting board and slice diagonally into 1-inch pieces. Toss sliced sausage back with roasted peppers and onions. Garnish with fresh parsley and serve immediately.

Notes

For best results, use sausages with natural casings for crispy edges. Cut vegetables uniformly to ensure even cooking. Avoid overcrowding the pan to prevent steaming. Garlic powder is preferred over fresh garlic to avoid burning. Let the dish rest for 5 minutes before serving for juicier sausages and melded flavors.
