A quick and simple no-cook freezer jam recipe using fresh peaches, honey, lemon juice, and fruit pectin that captures the bright, natural flavor of summer peaches without any cooking.

  • 4 cups fresh peaches, peeled, pitted, and finely chopped (about 1 kg or 2.2 lbs)
  • 3/4 cup honey (180 ml)
  • 2 tablespoons freshly squeezed lemon juice (30 ml)
  • 1 box (about 1.75 oz or 50 g) no-cook powdered fruit pectin (e.g., Sure-Jell)

Instructions

  1. Peel, pit, and finely chop the peaches to about 1/4-inch pieces.
  2. Using a potato masher or fork, gently mash the peaches to release some juice but keep plenty of texture, similar to chunky applesauce.
  3. Sprinkle the powdered fruit pectin evenly over the peaches and stir well to combine.
  4. Pour the honey and fresh lemon juice over the peach-pectin mixture and stir thoroughly until well blended.
  5. Let the mixture sit at room temperature for about 10 minutes to thicken slightly.
  6. Spoon the jam into clean, freezer-safe jars or containers, leaving about 1/2 inch of headspace for expansion.
  7. Refrigerate and allow jam to set for at least 12 hours for immediate use, or freeze for longer storage (up to one year). Thaw in the refrigerator overnight before serving.

Notes

Sprinkle pectin evenly over the fruit to avoid clumps. If jam is too runny, add up to 1/4 teaspoon more pectin. Let the jam rest at room temperature to activate pectin before freezing. Use clean, dry containers; sterilizing jars is not necessary. For vegan option, substitute honey with maple syrup.
