These easy no-bake chocolate protein balls with oats are fudgy, sweet, and filling. Ready in just 10 minutes, they’re the perfect grab-and-go snack for busy days.

Ingredients

Scale
  • 1 cup rolled oats (use certified gluten-free if needed)
  • 1/2 cup creamy peanut butter (natural, no-stir works great)
  • 1/3 cup honey or maple syrup
  • 1/4 cup chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 23 tablespoons mini chocolate chips (optional)
  • Shredded coconut, crushed nuts, or extra cocoa powder for rolling (optional)

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup rolled oats, 1/4 cup chocolate protein powder, 2 tablespoons unsweetened cocoa powder, and a pinch of sea salt. Whisk together with a fork to break up any clumps.
  2. Add the wet ingredients: To the same bowl, add 1/2 cup creamy peanut butter, 1/3 cup honey (or maple syrup), and 1 teaspoon vanilla extract.
  3. Mix everything together: Using a spatula or wooden spoon, stir until fully combined into a thick, fudgy dough. If too dry, add 1 tablespoon water or milk; if too sticky, add 1-2 tablespoons more oats.
  4. Fold in the chocolate chips: If using, add 2-3 tablespoons mini chocolate chips and fold gently.
  5. Chill the mixture (optional but recommended): Refrigerate the bowl for 15-20 minutes to make the mixture easier to handle.
  6. Roll into balls: Line a baking sheet with parchment paper. Using a cookie scoop or tablespoon, portion about 1.5 tablespoons per ball and roll between your palms to form smooth balls. Place on the prepared sheet.
  7. Optional: Roll in toppings: Roll each ball in shredded coconut, crushed nuts, or extra cocoa powder right after shaping.
  8. Chill to set: Refrigerate the baking sheet for at least 30 minutes until firm.
  9. Store and enjoy: Transfer to an airtight container and keep in the fridge for up to 2 weeks.

Notes

For best texture, use rolled oats rather than quick oats. If mixture is too sticky, wet hands with cold water before rolling. The flavor improves after a day in the fridge.
