  • 1 large egg
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1/4 cup (40 g) finely grated onion (with juices)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 1 cup (240 ml) marinara sauce (optional, for saucy cups)
  • 1/2 cup (60 g) shredded mozzarella (optional, for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Generously spray a 12-cup standard muffin tin with non-stick spray.
  2. Grate the onion on the fine side of a box grater or microplane to get about 1/4 cup with juices. Do not drain.
  3. In a large bowl, lightly beat the egg. Add grated onion (with juices), minced garlic, olive oil, and a pinch of salt. Stir to combine.
  4. Add breadcrumbs, Parmesan cheese, dried oregano, remaining salt, and black pepper. Stir until a thick, pasty mixture forms.
  5. Add ground turkey on top. Using your hands, gently fold and squeeze until just combined—do not overmix. Stop when no streaks of raw turkey remain (about 20 gentle folds).
  6. Using a cookie scoop (about 1.5 tablespoons) or spoon, divide mixture evenly among the 12 muffin cups (about 2 tablespoons each). Do not press down.
  7. Bake on the middle rack for 18-20 minutes, or until internal temperature reaches 165°F (74°C). For saucy cups: bake 15 minutes, top with marinara and mozzarella, then bake 5 more minutes until bubbly.
  8. Let meatballs rest in the muffin tin for 5 minutes (crucial for setting). Then gently lift out with a small spatula or butter knife.
  9. Cool completely on a wire rack if storing. If serving immediately, sprinkle with fresh parsley.

Don’t skip the grated onion—it adds moisture and flavor. Let meatballs rest 5 minutes after baking for best texture. For freezing: freeze raw scoops in muffin tin, then transfer to a bag; bake from frozen at 400°F for 22-25 minutes. These taste even better the next day.
