These Easy Mini Red White Blue Jello Parfait Cups are a quick, no-bake, colorful dessert perfect for summer occasions like July 4th picnics and barbecues. They feature layered red and blue Jello with a creamy white layer, topped optionally with fresh berries.

  • 1 package (3 oz / 85 g) strawberry or cherry flavored red Jello
  • 1 package (3 oz / 85 g) blueberry or berry blue flavored blue Jello
  • 2 cups boiling water (1 cup per Jello package)
  • 2 cups cold water (1 cup per Jello package)
  • 8 oz (225 g) whipped topping (store-bought or homemade whipped cream)
  • 1/2 cup (120 ml) sweetened condensed milk
  • Fresh berries (optional, small handful of blueberries and sliced strawberries)
  • About 12 mini parfait cups or clear plastic cups (4 oz / 120 ml each)

Instructions

  1. Prepare the Red Jello Layer: Dissolve red Jello powder in 1 cup boiling water, stir until dissolved. Add 1 cup cold water and mix well. Pour about 1.5 tablespoons into each mini cup. Refrigerate for about 15 minutes until firm but slightly tacky.
  2. Make the White Creamy Layer: Combine 8 oz whipped topping with 1/2 cup sweetened condensed milk, folding gently to keep light and fluffy. Spoon about 2 tablespoons over the set red layer in each cup. Refrigerate for 15 minutes to firm up.
  3. Prepare the Blue Jello Layer: Dissolve blue Jello powder in 1 cup boiling water, stir until dissolved. Add 1 cup cold water and let cool slightly. Slowly spoon 1.5 tablespoons over the creamy layer in each cup. Chill for 15-20 minutes until fully set.
  4. Garnish and Serve: Top each parfait with fresh blueberries and sliced strawberries if desired.

Notes

Pour each Jello layer slowly over the back of a spoon to avoid breaking through the previous layer. Chill each layer until firm but slightly tacky before adding the next to keep layers distinct. Folding whipped topping gently into condensed milk keeps the white layer light and fluffy. Can substitute coconut condensed milk and dairy-free whipped topping for dairy-free version. Sugar-free Jello and whipped topping can be used for a low-sugar version. Fresh berries add a fresh burst and antioxidants. Store leftovers covered in fridge up to 3 days; best eaten within 24-48 hours for neat layers.
