Quick and kid-friendly mini bagel pizzas topped with melty cheese and colorful veggies, perfect for school lunches or snacks.

Ingredients

  • Mini bagels (plain or whole wheat)
  • Tomato sauce (marinara or pizza sauce)
  • Shredded mozzarella cheese
  • Diced bell peppers (red, yellow, or green)
  • Halved cherry tomatoes
  • Thinly sliced mushrooms
  • Roughly chopped spinach leaves
  • Sliced olives (black or green)
  • Olive oil (1 teaspoon)
  • Italian seasoning (pinch)
  • Salt and pepper to taste
  • Optional: cooked sausage crumbles or turkey pepperoni
  • Optional: dairy-free cheese
  • Optional: gluten-free mini bagels
  • Optional: fresh basil leaves

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice each mini bagel in half horizontally and arrange cut-side up on the baking sheet.
  3. Spread about 1 tablespoon of tomato sauce evenly over each bagel half.
  4. In a mixing bowl, toss diced bell peppers, halved cherry tomatoes, sliced mushrooms, spinach, and olives with olive oil, Italian seasoning, salt, and pepper.
  5. Sprinkle 2 tablespoons of shredded mozzarella cheese over each sauced bagel half.
  6. Distribute the seasoned veggies evenly on top of the cheese.
  7. Bake for 10-12 minutes until cheese is melted and bubbly and bagel edges are lightly toasted.
  8. Let the mini pizzas rest for 2-3 minutes before serving.

Notes

Use room temperature ingredients for better melting. Don’t overload toppings to keep bagels crisp. Pre-toss veggies with oil and seasoning to enhance roasting flavor. Watch baking time closely to avoid burning. For extra crispiness, broil for 1-2 minutes at the end but watch carefully. Can be made ahead and stored covered in the fridge for up to 24 hours before baking. Reheat leftovers in toaster or conventional oven at 350°F for 5-7 minutes. Avoid microwaving to prevent sogginess.
