A simple and wholesome recipe for soft, chewy elderberry gummy bears made with honey and fresh ginger to support immunity and soothe the throat.

  • 1/2 cup (120 ml) elderberry syrup
  • 1/4 cup (60 ml) raw honey
  • 1 tablespoon fresh ginger, finely grated
  • 3 tablespoons (about 30 grams) unflavored gelatin powder
  • 1 cup (240 ml) filtered water
  • Optional: a few drops of lemon juice or a pinch of cinnamon

Instructions

  1. Pour 1 cup (240 ml) of filtered water into a mixing bowl and sprinkle 3 tablespoons (30 grams) of unflavored gelatin powder evenly over the surface. Let it sit for about 5 minutes until it thickens and blooms.
  2. In a small saucepan, combine 1/2 cup (120 ml) elderberry syrup, 1/4 cup (60 ml) raw honey, and 1 tablespoon finely grated fresh ginger. Heat gently over low heat for about 5 minutes, stirring occasionally, until the honey dissolves and the mixture is aromatic but not boiling.
  3. Slowly pour the warmed elderberry mixture into the bloomed gelatin while whisking constantly to dissolve fully and avoid lumps. If clumps appear, gently heat again over low heat while stirring until smooth.
  4. Carefully fill silicone gummy bear molds with the mixture. If molds are unavailable, pour into a lined small baking dish and plan to cut into squares after setting.
  5. Place the molds in the refrigerator for at least 2 hours or until gummies are firm to the touch. Avoid freezing.
  6. Gently unmold the gummies and store them in an airtight container in the refrigerator for up to 2 weeks.

Notes

Bloom gelatin properly before mixing to avoid lumps. Keep syrup warm but not boiling to preserve gelatin setting ability. Adjust gelatin amount if gummies are too soft or too firm. Fresh ginger preferred over powdered for best flavor. Slightly greasing molds with coconut oil can help with sticking.
