  • 1 cup cottage cheese (full-fat or low-fat, small-curd preferred)
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • ½ teaspoon fine sea salt (reduce to ¼ teaspoon if cheese is salty)
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup milk (any kind; whole milk for richness, oat milk for dairy-free)
  • Optional mix-ins: ¼ cup cooked crumbled bacon, ¼ cup finely diced bell pepper, 2 tablespoons chopped green onion, ¼ cup sautéed spinach (squeezed dry)

Instructions

  1. Preheat oven to 375°F (190°C). Generously grease a 12-cup muffin tin with non-stick cooking spray or butter.
  2. Blend 1 cup cottage cheese in a blender or small food processor for 30-45 seconds until completely smooth. Set aside.
  3. Crack 8 large eggs into a medium mixing bowl. Whisk gently for about 30 seconds until yolks break and whites are incorporated. Do not over-whisk.
  4. Pour blended cottage cheese and ¼ cup milk into the eggs. Whisk until smooth and uniform, about 20 seconds.
  5. Stir in ½ teaspoon salt and ¼ teaspoon black pepper. If using mix-ins, stir them in now. Reserve about 2 tablespoons of shredded cheese for topping.
  6. Pour egg mixture evenly into the 12 prepared muffin cups, filling each about ¾ full.
  7. Sprinkle remaining shredded cheddar evenly over the tops.
  8. Bake on the middle rack for 25-30 minutes, until set around the edges and slightly jiggly in the center. A toothpick inserted in the center should come out clean or with a few moist crumbs.
  9. Let cool in the pan for 5 minutes. Run a small knife around edges to loosen, then transfer to a cooling rack. Cool completely before storing (about 20 minutes).
