These Easy Ham and Cheese Sushi Rolls are a quick, fun, kid-friendly snack that uses the same technique as classic maki but fills it with flavors everyone already loves. Think of them as the sushi version of a grilled cheese sandwich, coming together in about ten minutes with zero special skills required.

Ingredients

Scale
  • 1 cup sushi rice (or short-grain white rice)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 4 sheets nori (dried seaweed)
  • 4 ounces cream cheese, softened
  • 6 slices deli ham
  • 4 slices cheddar cheese

Instructions

  1. Prepare the rice: Rinse 1 cup sushi rice in cold water until water runs clear. Cook according to package directions (about 15 minutes in a rice cooker or 18 minutes on stovetop). While still hot, gently fold in mixture of rice vinegar, sugar, and salt using a cutting motion. Fan the rice to cool. Let cool until warm, about 5 minutes.
  2. Set up rolling station: Place bamboo mat on cutting board. Have bowl of vinegar water nearby. Lay one nori sheet shiny side down, rough side up.
  3. Spread cream cheese: Using a butter knife or offset spatula, spread about 1 ounce softened cream cheese in a thin, even layer across entire nori sheet.
  4. Add rice: Wet hands in vinegar water. Spread about ¾ cup rice evenly over cream cheese layer, leaving a 1-inch strip at top edge uncovered. Press gently but firmly to an even layer about ¼-inch thick.
  5. Layer fillings: Lay 1½ slices ham across center of rice, slightly overlapping. Place one half-slice cheddar cheese on top of ham in a neat line.
  6. Roll it up: Using bamboo mat, lift edge closest to you and fold over fillings. Tuck nori edge just past fillings, gently squeeze mat to shape. Continue rolling forward, peeling back mat, until sealed. Squeeze gently along entire roll.
  7. Slice and serve: Wet knife with vinegar water. Cut roll in half, then each half into 3 or 4 pieces. Wipe and rewet blade between cuts. Arrange on plate cut sides up.
  8. Repeat with remaining 3 rolls.

Notes

Keep hands wet with vinegar water to prevent rice sticking. Use room-temperature cream cheese for easy spreading. Wet knife between every cut for clean slices. Let rolls rest for a minute before slicing. If nori cracks, press back together with a wet finger. Don’t overfill rolls. Work quickly once rice is on nori to prevent sogginess.
