Ingredients

Scale
  • 8 ounces aged cheddar, sliced into thin wedges
  • 8 ounces brie, kept whole or cut into wedges
  • 6 ounces aged gouda, sliced
  • 4 ounces goat cheese log, sliced into rounds
  • 6 ounces prosciutto, thinly sliced
  • 8 ounces salami, sliced
  • 4 ounces pepperoni, sliced
  • 1 cup candy corn
  • 1 cup chocolate-covered pretzels
  • 1 cup caramel popcorn
  • 1 cup red grapes, washed and separated into small clusters
  • 1 apple (Granny Smith), thinly sliced
  • Fresh rosemary sprigs for garnish
  • 1 box water crackers
  • 1 baguette, sliced into thin rounds and lightly toasted
  • 1 bag pretzel chips
  • 2 tablespoons honey
  • 2 tablespoons whole grain mustard
  • 1/4 cup pumpkin butter (optional)

Instructions

  1. Prep your cheeses: Take all cheeses out of the refrigerator 15 minutes before assembling. Slice aged cheddar into thin wedges about 1/4 inch thick. Cut brie into wedges or leave whole. Slice aged gouda into thin triangles. Cut goat cheese log into 1/2 inch rounds. Arrange each cheese in different areas of the board.
  2. Arrange the meats: Tear prosciutto into ribbons about 2 inches wide and fold into loose piles. Fold each salami slice in half, then fold again to create a quarter-circle shape. Arrange pepperoni in small overlapping stacks. Place meats in clusters around the board, leaving space between each type.
  3. Add the sweets: Pour candy corn into a small bowl or pile directly on the board in a small cluster. Arrange chocolate-covered pretzels in a separate area. Pile caramel popcorn in a loose mound. Keep sweets away from wet ingredients like grapes and apple slices.
  4. Place fresh elements: Arrange red grape clusters in small bunches around the board. Place apple slices in a fan pattern near the cheddar cheese. Tuck rosemary sprigs between cheese wedges for a festive look.
  5. Fill the bowls: Pour honey into a small ramekin and place near the brie. Put whole grain mustard in another small bowl near the salami. If using pumpkin butter, place in a third bowl near the aged gouda. Position bowls along the edges of the board.
  6. Fill in with crackers: Arrange water crackers in a single layer along one edge of the board. Place baguette slices in a fan pattern near the brie. Pile pretzel chips in a cluster near the goat cheese.
  7. Final touches: Step back and look at your board. Fill any empty gaps with extra grapes, rosemary sprigs, or a few more candy corn pieces. Add a few extra chocolate-covered pretzels in any bare spots. Serve immediately or cover with plastic wrap and refrigerate for up to 2 hours. If refrigerating, let sit at room temperature for 15 minutes before serving.

Notes

Don’t overthink the arrangement; place items in clusters and let the colors do the work. Balance sweet and savory by interspersing them. Keep the board refrigerated until 15 minutes before serving. Use sturdy crackers like water crackers or pretzel crisps. Prep all ingredients before starting assembly. Don’t skimp on candy corn for visual impact.
