  • 1 cup granulated sugar (200 g)
  • 4 cups water (960 ml)
  • 2 tablespoons lemon juice (30 ml)

Instructions

  1. Rinse peaches under cool water. Peel each peach gently using a paring knife.
  2. Slice each peach into 1/4-inch (0.6 cm) thick slices.
  3. Toss the slices into a large bowl and sprinkle with lemon juice to prevent browning.
  4. In a large saucepan, combine sugar and water. Heat over medium heat, stirring occasionally, until sugar dissolves completely and syrup just starts to simmer. Remove from heat.
  5. Let the syrup cool for 5-7 minutes until warm but not boiling.
  6. Place peach slices into clean, freezer-safe containers or resealable bags.
  7. Pour the warm syrup over the peaches, making sure they are fully submerged to avoid freezer burn.
  8. Optional: Spread peach slices in a single layer on a baking sheet lined with parchment paper and freeze for 2 hours or until firm. Then transfer frozen slices into containers or bags with syrup to prevent sticking.
  9. Seal containers tightly, label with date, and freeze for up to 12 months.

Notes

Flash freezing peach slices before packing prevents them from sticking together. Use lemon juice to prevent browning. Cool syrup before pouring to avoid cooking peaches. Peeling is recommended for best texture but optional for rustic feel. Adjust sugar for sweetness preference. Blanch peaches briefly for easier peeling if needed.
