  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter
  • 2 medium Yukon Gold potatoes, diced small
  • 1 cup sharp cheddar cheese, shredded
  • 8 large flour tortillas (10-inch)
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • Salt and black pepper to taste
  • 1 cup cooked bacon or sausage, crumbled (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Dice potatoes, onion, and bell pepper.
  2. Heat 1 tablespoon butter in a large skillet over medium heat. Add potatoes and onions, cooking until tender and slightly crispy. Season with salt and pepper; set aside.
  3. Whisk eggs, milk, salt, and pepper in a bowl. Heat remaining 1 tablespoon butter in the same skillet over medium-low heat. Pour in egg mixture and stir gently until just set but still moist. Remove from heat.
  4. Warm tortillas in the microwave or a dry skillet to make them pliable.
  5. Lay a tortilla flat. Spoon egg mixture down the center, top with potatoes, cheese, and optional meat.
  6. Fold sides inward and roll tightly from the bottom up.
  7. Wrap each burrito tightly in parchment paper, then in aluminum foil. Label with date.
  8. Freeze for up to 3 months. To cook, microwave for 2-3 minutes or bake at 375°F for 20-25 minutes.

Notes

Ensure eggs are slightly undercooked to prevent sogginess. Use parchment paper before foil to prevent sticking. Roll burritos tightly to maintain shape. Let tortillas come to room temperature before wrapping to prevent cracking.
