This crockpot turkey taco soup is a hearty, flavorful, and healthy meal that tastes like a taco in soup form. It’s easy to make with simple ingredients and perfect for busy weeknights.

  • 1 pound lean ground turkey (93/7 recommended)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (14.5-ounce) can diced tomatoes with green chiles (e.g., Rotel)
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano (Mexican oregano preferred)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/2 teaspoon cayenne pepper (for extra heat)
  • For serving: tortilla chips, shredded cheddar or Monterey Jack cheese, sour cream or Greek yogurt, fresh cilantro, diced avocado, lime wedges

Instructions

  1. Brown the turkey: Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes).
  2. Sauté aromatics: Add diced onion to the skillet with the turkey and cook for about 3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add tomato paste: Stir in tomato paste and cook for 1-2 minutes, stirring constantly.
  4. Transfer to slow cooker: Scrape the turkey mixture into a 6-quart or larger slow cooker.
  5. Add remaining ingredients: Add black beans, pinto beans, corn, diced tomatoes with green chiles, fire-roasted diced tomatoes, chicken broth, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne (if using). Stir to combine.
  6. Cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. Taste and adjust seasoning: Before serving, adjust salt, cumin, or add a squeeze of lime to taste.
  8. Serve: Ladle into bowls and top with tortilla chips, cheese, sour cream, avocado, cilantro, and lime wedges.

Notes

For a thicker soup, mash some beans against the side of the pot. For a creamier version, stir in 4 oz cream cheese or 1/2 cup heavy cream during the last 30 minutes. This soup freezes well for up to 3 months.
