  • 1.5 to 2 pounds beef chuck roast or flank steak, sliced into thin strips
  • ½ cup low-sodium soy sauce
  • ¼ cup beef broth
  • ¼ cup brown sugar, packed
  • 2 tablespoons fresh ginger, grated
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water
  • 3 to 4 cups broccoli florets
  • Cooked white rice, for serving
  • Sesame seeds and sliced green onions, for garnish (optional)

Instructions

  1. Slice the beef into thin strips, about ¼-inch thick, cutting against the grain. Pat dry with paper towels.
  2. In a medium bowl, whisk together soy sauce, beef broth, brown sugar, grated ginger, minced garlic, rice vinegar, sesame oil, and red pepper flakes (if using).
  3. Place the sliced beef in the bottom of the crockpot. Pour the sauce mixture over the top, ensuring all beef is coated.
  4. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until beef is fork-tender.
  5. About 30 minutes before serving, start cooking the rice.
  6. Steam the broccoli florets: microwave with 2 tablespoons water for 2 to 3 minutes, or steam on stovetop for 3 to 4 minutes, until tender-crisp.
  7. When beef is tender, use a slotted spoon to transfer beef to a plate. Leave sauce in crockpot.
  8. In a small bowl, whisk cornstarch and cold water until smooth. Turn crockpot to HIGH, pour in slurry, and stir constantly for 2 to 3 minutes until sauce thickens.
  9. Return beef to thickened sauce. Gently fold in steamed broccoli. Let sit for 2 to 3 minutes.
  10. Serve over steamed rice. Garnish with sesame seeds and sliced green onions if desired.

Notes

Slice beef against the grain for tenderness. Don’t add broccoli at the beginning to avoid mushiness. Use fresh ginger for best flavor. Don’t lift the lid during cooking. For a thicker sauce, add more cornstarch slurry as needed.
