A quick and easy sheet pan roast combining crispy sausage links with tender, caramelized apples and onions, perfect for cozy fall dinners.

  • 1 pound Italian sausage links (spicy or mild)
  • 2 medium firm apples (such as Honeycrisp or Granny Smith), cored and sliced into ½ inch wedges
  • 1 large yellow onion, sliced into wedges
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh rosemary, finely chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to come to temperature for at least 15 minutes.
  2. Core and slice the apples into thick wedges (about ½ inch thick). Slice the onion into similar sized wedges and place both in a large mixing bowl.
  3. Add olive oil, apple cider vinegar, rosemary, salt, pepper, minced garlic, and red pepper flakes (if using) to the bowl. Toss gently but thoroughly to coat evenly.
  4. Arrange the apples and onions in a single layer on a large rimmed baking sheet, leaving space for the sausages.
  5. Place the sausage links on the pan nestled among the apple and onion wedges so the sausage juices drip onto the fruit.
  6. Roast in the oven for 25–30 minutes, turning the sausages halfway through with tongs to crisp all sides evenly. The apples should be tender and caramelized at the edges, and the sausage skins golden and crackly.
  7. Check that the internal temperature of the sausages reaches 160°F (71°C). If needed, roast a few minutes longer but watch to avoid mushy apples.
  8. Remove from oven and let rest for 5 minutes to allow juices to redistribute and the fruit to cool slightly.
  9. Serve warm, straight from the pan or transferred to a serving dish.

Notes

Avoid overcrowding the pan to ensure proper caramelization and crisping. Toss apples with extra apple cider vinegar or lemon juice if they brown too quickly. Turn sausages halfway through cooking for even crispiness. Broil for 1–2 minutes at the end for extra crispy skins but watch carefully to prevent burning. For vegetarian option, substitute sausage with smoked tofu or plant-based sausage and adjust roasting time accordingly.
