Easy Crispy Lemon Herb Chicken Recipe with Roasted Potatoes

A simple and reliable recipe for crispy skin chicken thighs with bright lemon-herb flavor, paired with golden roasted potatoes. Perfect for a quick and satisfying dinner.

  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 700 grams)
  • 1.5 pounds (700 grams) baby Yukon Gold or red potatoes, halved or quartered
  • 1 large lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped (or fresh thyme or rosemary)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil (or avocado oil)
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the chicken thighs dry with paper towels to remove excess moisture.
  2. Season chicken generously on both sides with salt, pepper, dried oregano, and thyme.
  3. Drizzle about 1 tablespoon olive oil over chicken and rub in minced garlic and lemon zest.
  4. Let chicken rest at room temperature for 10-15 minutes.
  5. Toss halved potatoes in a mixing bowl with 2 tablespoons olive oil, salt, pepper, and a little dried thyme if desired.
  6. Preheat oven to 425°F (220°C).
  7. Heat a large oven-safe skillet over medium-high heat. Add butter and let it melt until foaming slightly.
  8. Place chicken thighs skin-side down in the skillet without crowding. Cook for 6-8 minutes until skin is golden brown and crispy.
  9. Flip chicken and cook the other side for 3-4 minutes.
  10. Nestle potatoes around the chicken in the skillet (or place chicken and potatoes on a baking sheet).
  11. Drizzle lemon juice over chicken and potatoes.
  12. Transfer skillet or baking sheet to the oven and roast for 20-25 minutes until chicken reaches 165°F (74°C) internally and potatoes are tender and golden.
  13. Optional: broil for 1-2 minutes at the end for extra crispness, watching carefully to avoid burning.
  14. Remove from oven and let chicken rest for 5 minutes.
  15. Sprinkle fresh parsley over chicken and potatoes before serving.

Pat chicken dry for crispiness. Do not crowd the pan to avoid steaming. Use medium-high heat for searing. Let chicken rest before serving to keep juices locked in. Roast potatoes alongside chicken to soak up pan juices. Optional broil at end for extra crispness. For dairy-free, omit butter or use plant-based spread.
