Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (68 ounces / 170225 grams each)
  • 1 cup plain or panko breadcrumbs (about 100 grams)
  • 1/4 cup finely grated Parmesan cheese (25 grams)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 1/4 cup honey (85 grams)
  • 2 tablespoons soy sauce (30 ml)
  • 2 cloves fresh garlic, minced
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it. Place a wire rack on the sheet if using.
  2. In a medium bowl, mix breadcrumbs, Parmesan, garlic powder, salt, and pepper until combined.
  3. In another bowl, beat the eggs until smooth.
  4. Pat chicken breasts dry with paper towels. Dip each breast into the egg wash, letting excess drip off, then press into breadcrumb mixture until fully coated. For extra crunch, double-dip by repeating egg and breadcrumb coating.
  5. Arrange coated chicken breasts on the prepared baking sheet or wire rack, spacing apart.
  6. Bake for 15 minutes at 400°F (200°C) to set the crust and start cooking the chicken.
  7. While baking, combine honey, soy sauce, minced garlic, olive oil, and lemon juice in a small saucepan over low heat. Stir gently until warmed and slightly thickened, about 5 minutes. Avoid boiling.
  8. Remove chicken from oven after 15 minutes. Brush each breast generously with the honey garlic glaze.
  9. Return chicken to oven and bake for another 8-10 minutes, or until internal temperature reaches 165°F (74°C) and glaze is bubbling and caramelized.
  10. Let chicken rest for 5 minutes before slicing to keep juices locked in.

Notes

Pat chicken dry before coating to ensure crispiness. Use a wire rack if possible for even air circulation. Avoid overcrowding the pan. Apply honey garlic glaze halfway through baking to prevent burning. Double coat chicken for extra crunch. If glaze darkens too fast, tent with foil. For gluten-free, substitute breadcrumbs with crushed gluten-free crackers or almond flour. For soy-free, use tamari or coconut aminos instead of soy sauce. Reheat leftovers gently in oven to maintain crispness.
