These easy buffalo chicken sliders are the perfect game day snack, featuring tender shredded chicken in spicy buffalo sauce, melty cheese, and buttery buns. Ready in just 25 minutes, they’re a crowd-pleaser that disappears fast.

  • 3 cups cooked, shredded chicken (rotisserie chicken works perfectly)
  • 1/2 cup buffalo wing sauce (preferably Frank’s RedHot)
  • 4 oz cream cheese, softened to room temperature
  • 1/4 cup ranch dressing or blue cheese dressing
  • 1 cup shredded cheddar cheese (sharp cheddar preferred)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 12 slider buns or Hawaiian rolls
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon garlic salt
  • 1/4 cup crumbled blue cheese or shredded mozzarella for topping (optional)
  • Celery sticks and carrot sticks for serving
  • Extra ranch or blue cheese dressing for dipping
  • Fresh parsley or green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish or line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the shredded chicken, buffalo wing sauce, softened cream cheese, ranch or blue cheese dressing, garlic powder, onion powder, and half of the shredded cheddar cheese. Stir until well combined.
  3. Slice the entire pack of slider buns in half horizontally, keeping them connected. Place the bottom half in the prepared baking dish.
  4. Spread the buffalo chicken mixture evenly over the bottom buns. Sprinkle the remaining shredded cheddar cheese over the chicken. Place the top half of the buns over the filling.
  5. In a small bowl, whisk together the melted butter, honey (if using), and garlic salt. Brush this mixture generously over the tops of the buns.
  6. Cover the dish loosely with aluminum foil and bake for 10 minutes.
  7. Remove the foil and bake for another 8-10 minutes, until the tops are golden brown and the edges are bubbly. Optionally, broil for 1-2 minutes for extra color, watching closely.
  8. Let the sliders rest in the dish for 5 minutes before slicing. Cut between the rolls, transfer to a serving platter, and garnish with crumbled blue cheese or fresh parsley if desired.

Notes

For best results, use room temperature cream cheese to avoid lumps. To prevent soggy buns, toast the bottom buns for 2-3 minutes before adding filling. Let sliders rest for 5 minutes after baking for easier handling. These sliders taste even better the next day as flavors meld.
