Ingredients

Scale
  • 4 salmon fillets (about 6 ounces each)
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of red pepper flakes (optional)
  • 1 bunch asparagus (about 1 pound)
  • 1 tablespoon olive oil (for asparagus)
  • ¼ teaspoon salt (for asparagus)
  • Pinch of black pepper (for asparagus)
  • Fresh lemon wedges (for garnish, optional)
  • Fresh parsley or dill, chopped (for garnish, optional)
  • Toasted sesame seeds (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil.
  2. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, 2 tablespoons olive oil, minced garlic, ½ teaspoon salt, ¼ teaspoon black pepper, and red pepper flakes (if using). Set aside.
  3. Pat the salmon fillets dry with paper towels. Place them skin-side down on the prepared baking sheet, spacing evenly.
  4. Rinse the asparagus and snap off the woody ends. Pat dry and arrange around the salmon on the baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with ¼ teaspoon salt and a pinch of black pepper. Toss gently to coat.
  5. Spoon the honey mustard glaze over the salmon fillets, spreading evenly with the back of the spoon. Some glaze may drip onto the asparagus.
  6. Bake for 12-15 minutes, until the salmon is opaque and flakes easily with a fork (internal temperature of 145°F) and the asparagus is tender-crisp.
  7. Optional: For extra caramelization, switch the oven to broil for the last 1-2 minutes, watching closely to prevent burning.
  8. Let the salmon rest on the baking sheet for 2 minutes. Squeeze fresh lemon juice over everything and garnish with chopped parsley or dill and toasted sesame seeds if desired.

Notes

Pat the salmon dry for a better crust. Let the salmon rest for 2 minutes before serving. For thicker asparagus, give it a 3-4 minute head start in the oven. The glaze can be made up to 3 days ahead. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 300°F oven for 5-7 minutes or microwave in 30-second bursts covered with a damp paper towel.
