Easy Baked Apple Cider Donuts

Soft, tender baked donuts infused with concentrated apple cider flavor and coated in cinnamon sugar. This simple 5-ingredient style recipe offers the taste of fall without the mess of deep frying.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced by half (about 1 cup). This takes 15-20 minutes. Remove from heat and let cool completely.
  2. Preheat oven to 350°F (175°C). Lightly grease a 6-cavity or 12-cavity donut pan (or muffin tin) with non-stick spray or butter.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  4. In a large bowl, beat softened butter and ¾ cup granulated sugar with a mixer on medium speed for 2-3 minutes until light and fluffy. Scrape down sides.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  6. Add the cooled, reduced apple cider to the butter mixture and mix until combined. Gradually add dry ingredients, mixing on low speed just until flour disappears. Do not overmix.
  7. Spoon batter into prepared pan cavities, filling each about ¾ full.
  8. Bake for 12-14 minutes until golden brown and a toothpick inserted comes out clean.
  9. Cool donuts in the pan for 5 minutes, then transfer to a wire rack to cool for another 5 minutes until warm (not hot).
  10. Mix ½ cup sugar and 1 teaspoon cinnamon in a small bowl. Toss warm donuts in the mixture to coat evenly. Serve immediately.

Notes

Ensure the reduced cider is completely cool before adding to butter to prevent melting. Do not overmix the batter to avoid tough donuts. Coat donuts when they are warm, not hot, to ensure sugar adheres properly. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter.
