A simple, creamy, and spicy buffalo chicken dip made with just three ingredients in a slow cooker. Perfect for late-night cravings or party appetizers.

Ingredients

Scale
  • 8 ounces cream cheese, softened and cubed
  • 1 cup buffalo sauce
  • 2 cups cooked shredded chicken

Instructions

  1. If using raw chicken, boil until cooked through (15-20 minutes), then shred into bite-sized pieces. If using rotisserie chicken, shred it to yield 2 cups.
  2. Let the block of cream cheese sit at room temperature for at least 30 minutes to soften. Cut into small cubes to help it soften faster.
  3. Place the cubed cream cheese into the slow cooker. Pour the buffalo sauce over the cream cheese, then add the shredded chicken. Do not stir yet.
  4. Cover the slow cooker and cook on low for 1-2 hours. Do not cook on high to prevent separation.
  5. After 1 hour, check the dip. It should be mostly melted but still thick. Use a silicone spatula to stir vigorously until the mixture is smooth and uniform.
  6. If the dip is too thick, add a splash of milk or extra buffalo sauce. If too thin, cook for another 15 minutes.
  7. Serve warm. Keep on the warm setting if serving over several hours, stirring occasionally to prevent a skin from forming.

Notes

Ensure cream cheese is softened to room temperature to avoid grainy texture. Avoid cooking on high heat to prevent separation. This dip is naturally gluten-free if using a gluten-free buffalo sauce. Do not freeze as the texture will become grainy.
