  • 1 pound (450g) 80/20 ground beef
  • 1 medium yellow onion, finely diced
  • 1 large red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup uncooked long-grain white rice (Jasmine or Basmati)
  • 1 ½ cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 1 tablespoon soy sauce
  • Salt and black pepper to taste
  • Optional: ½ cup black beans, ½ cup corn, shredded cheddar cheese, fresh cilantro

Instructions

  1. Dice the onion and bell pepper, and mince the garlic. Set aside.
  2. Heat a large skillet over medium-high heat. Add ground beef and break into small crumbles with a wooden spoon. Cook until no longer pink (5-7 minutes). Season with half of the cumin, paprika, and oregano.
  3. Add diced onion and bell pepper to the pan. Cook for 2-3 minutes until onions are translucent. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in uncooked rice and toast for 1 minute. Pour in chicken broth and soy sauce, stirring to scrape up browned bits from the bottom of the pan.
  5. Bring to a boil, then reduce heat to low. Cover with a tight-fitting lid and simmer for 5-7 minutes until liquid is absorbed and rice is tender. Do not lift the lid during this time.
  6. Remove from heat and let rest, covered, for 2 minutes. Fluff with a fork, adjust seasoning with salt and pepper, and serve topped with cheese and cilantro if desired.

Notes

If using leftover cooked rice, skip the simmering step and just heat the rice with the beef and seasonings. For a gluten-free version, use tamari instead of soy sauce. Toasting the rice before adding liquid helps keep grains separate and prevents mushiness.
