  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (about 2 medium) zucchini, shredded and squeezed dry
  • ½ cup (90g) chocolate chips or chunks (optional)
  • ½ cup (115g) unsalted butter, softened (for frosting)
  • 1 ¾ cups (210g) powdered sugar (for frosting)
  • ¼ cup (25g) unsweetened cocoa powder (for frosting)
  • 23 tablespoons (30-45ml) milk or cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving a slight overhang.
  2. Shred the zucchini finely using a box grater or food processor. Squeeze out as much moisture as possible.
  3. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  4. In a separate bowl, beat the eggs, vegetable oil, and vanilla extract until smooth and slightly thickened.
  5. Pour the wet ingredients into the dry ingredients and gently fold together until just combined.
  6. Fold in the shredded zucchini and chocolate chips if using, being careful not to overmix.
  7. Pour the batter into the prepared pan and smooth the top evenly with a spatula.
  8. Bake for 30-35 minutes. Insert a toothpick in the center; it should come out with a few moist crumbs but not wet batter.
  9. Cool the brownies completely in the pan.
  10. To make the frosting, beat the softened butter until creamy. Sift in powdered sugar and cocoa powder.
  11. Add 2 tablespoons milk and vanilla extract, then beat until smooth and fluffy. Adjust consistency with more milk if needed.
  12. Spread the frosting evenly over the cooled brownies.
  13. Cut into squares and serve.
