  • 1/2 cup chicken broth
  • 1 teaspoon Dijon mustard
  • Fresh thyme or parsley, a few sprigs chopped for garnish
  • A squeeze of lemon juice (optional)

Instructions

  1. Pat the pork chops dry with paper towels to help the crust form. Season both sides generously with salt and black pepper. Let them sit at room temperature for about 15 minutes.
  2. Place a heavy skillet or cast-iron pan over medium-high heat and add 1 tablespoon of olive oil. Heat until shimmering but not smoking, about 2 minutes.
  3. Carefully lay the pork chops in the pan without overcrowding. Cook for 4-5 minutes without moving to build a golden crust. Flip and sear the other side for another 4-5 minutes or until internal temperature reaches 145°F (63°C).
  4. Transfer the pork chops to a plate and tent loosely with foil to rest while making the sauce.
  5. Reduce heat to medium and add 2 tablespoons butter to the same skillet. Once melted, add sliced mushrooms and sauté for about 5 minutes until browned and tender.
  6. Stir in minced garlic and shallots, cooking for another 1-2 minutes until fragrant.
  7. Pour in 1/2 cup chicken broth, scraping up browned bits from the pan. Let simmer for 2-3 minutes until slightly reduced.
  8. Stir in 3/4 cup heavy cream and 1 teaspoon Dijon mustard. Let the sauce simmer gently for 3-4 minutes until thickened. Adjust seasoning with salt, pepper, and a squeeze of lemon juice.
  9. Serve pork chops with creamy mushroom sauce spooned over the top. Garnish with fresh thyme or parsley.
