Crispy Maple Roasted Sweet Potatoes with Candied Pecans

A quick and easy 30-minute side dish featuring crispy roasted sweet potatoes tossed in maple butter and topped with crunchy candied pecans.

  • 2 large sweet potatoes (firm, smooth-skinned)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp pure maple syrup (divided)
  • 1 tbsp unsalted butter (divided)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup raw pecan halves
  • 1 tbsp granulated sugar
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash, scrub, and pat dry sweet potatoes. Peel if desired, then cut into 1/2-inch uniform cubes.
  3. Place potato cubes on the baking sheet. Drizzle with olive oil and sprinkle with cinnamon, ginger, salt, and pepper. Toss to coat evenly.
  4. Spread potatoes in a single layer, ensuring they are not crowded.
  5. Roast for 20 minutes, then flip the potatoes. Roast for another 10-15 minutes until tender inside and crispy outside with dark brown edges.
  6. While potatoes roast, melt 1 tbsp butter in a small saucepan over medium-low heat.
  7. Add 1 tbsp maple syrup and granulated sugar to the melted butter. Stir until sugar dissolves and mixture bubbles slightly (2-3 minutes).
  8. Add pecans to the saucepan and toss quickly to coat. Remove from heat immediately.
  9. Spread candied pecans onto parchment paper to cool and harden into clusters.
  10. Once potatoes are done, remove from oven. Drizzle with remaining 2 tbsp maple syrup and 1 tbsp melted butter. Toss gently.
  11. Sprinkle cooled candied pecans over the potatoes and serve immediately.

Notes

Do not crowd the pan to ensure crispiness. Make pecans fresh for best texture. Leftovers can be stored in the fridge for 3 days and reheated in the oven at 350°F to restore crispness. Avoid microwaving as it makes potatoes soft.
