  • 1/4 cup heavy cream
  • 2 large egg yolks
  • Salt and pepper to taste
  • Optional: pinch of nutmeg
  • Optional: 2 tablespoons finely grated Parmesan cheese

Instructions

  1. Place peeled and chunked potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 20-25 minutes. Drain thoroughly.
  2. While potatoes cook, finely mince garlic and chop fresh rosemary and thyme. Set aside.
  3. Return drained potatoes to the pot over low heat for 1-2 minutes to dry out excess moisture. Transfer to a bowl and mash or rice until smooth, avoiding over-mixing.
  4. Mix in softened butter, minced garlic, fresh herbs, heavy cream, egg yolks, salt, and pepper. Stir gently until fully combined. Add Parmesan or nutmeg if using.
  5. Fill a piping bag fitted with a large star tip with the potato mixture. Pipe swirls about 2 inches in diameter onto a parchment-lined baking sheet, leaving space between each.
  6. Cover the baking sheet with plastic wrap and refrigerate for 1-24 hours if making ahead.
  7. Preheat oven to 425°F (220°C). Bake the duchess potatoes until golden brown and crispy on the edges, about 20-25 minutes, rotating the baking sheet halfway through.
  8. Let cool for a few minutes before serving to maintain crisp edges and fluffy centers.
