Instructions

  1. Activate the yeast by combining warm water (110°F/43°C), sugar, and yeast in a small bowl. Stir gently and let sit for 5-7 minutes until foamy.
  2. In a large bowl, combine flour and salt. Add melted butter and yeast mixture. Stir until a shaggy dough forms.
  3. Knead the dough by hand on a floured surface for 8-10 minutes or 5 minutes in a stand mixer until smooth and elastic but slightly tacky.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  5. Mix softened cream cheese, shredded cheddar, diced jalapeños, minced garlic, smoked paprika, salt, and pepper in a bowl. Chill in the fridge.
  6. Preheat oven to 450°F (232°C) and line baking sheets with parchment paper.
  7. Punch down the risen dough and roll into a ½ inch thick rectangle on a floured surface. Spread jalapeño popper filling evenly over dough.
  8. Roll the dough tightly into a log from the long side. Slice into 1-inch pieces.
  9. Bring 10 cups water and baking soda to a rolling boil. Boil pretzel bites in batches for about 30 seconds until they float. Drain on a clean towel.
  10. Place bites on baking sheet, brush with melted butter, and sprinkle with coarse sea salt.
  11. Bake for 12-15 minutes until golden brown and crispy.
  12. For the beer cheese dip, melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute to form a roux.
  13. Gradually whisk in beer, then add shredded cheddar. Stir until melted and smooth.
  14. Add Dijon mustard, garlic powder, salt, and pepper. Keep warm on low heat.
  15. Let pretzel bites cool slightly and serve warm with beer cheese dip.

Notes

Use good quality sharp cheddar for best melt and flavor. Chilling the filling helps prevent oozing during baking. Boiling in baking soda water is essential for authentic pretzel crust. If dough is sticky, dust lightly with flour but avoid overdoing it to prevent dryness. The beer cheese dip can be reheated gently with a splash of beer or milk.
