  • 2 tablespoons honey (preferably local, raw honey)
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt

  • ½ teaspoon vanilla extract (optional)
  • ¼ cup pepitas or pumpkin seeds (optional)
  • ¼ cup chopped nuts like almonds or pecans (optional)
  • 2 tablespoons flaked coconut (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Drain and rinse the chickpeas thoroughly under cold water. Lay them out on a clean kitchen towel or paper towels and gently pat dry completely.
  3. Optionally, trim the skins off a few chickpeas for extra crunch.
  4. In a mixing bowl, combine honey, olive oil, sea salt, cinnamon, and vanilla extract (if using). Stir until smooth and well blended.
  5. Toss the dried chickpeas in the honey mixture until evenly coated.
  6. Spread the chickpeas out in a single layer on the prepared baking sheet, ensuring they are not crowded.
  7. Roast in the oven for 25-30 minutes, shaking or stirring the pan every 8-10 minutes to ensure even cooking. Watch closely after 20 minutes to avoid burning.
  8. Optional: During the last 5 minutes, sprinkle in pepitas, chopped nuts, and flaked coconut if using to lightly toast them.
  9. Remove from oven and let cool completely on the baking sheet to allow chickpeas to crisp further.
  10. Store in an airtight container once cooled. Keeps crunchy for up to one week.
