Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat. If using a wire rack, place it on the sheet.
  2. Prepare the cauliflower: Remove leaves and cut into bite-sized florets (1.5-2 inches). Rinse and pat very dry with a clean towel.
  3. Make the batter: In a large bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly pour in milk while whisking until smooth and thick (like heavy cream).
  4. Batter the cauliflower: Add dry florets to the batter and toss gently until evenly coated. Let sit for 2 minutes.
  5. Arrange on baking sheet: Using tongs, place battered florets on the prepared sheet, leaving space between each. Lightly spray or brush tops with olive oil.
  6. Bake for 20 minutes: Bake for 10 minutes, then flip each floret and bake for another 10 minutes until golden and firm. For extra crunch, bake 3-5 more minutes.
  7. Make buffalo sauce: In a small saucepan over low heat, combine hot sauce, melted butter, honey (if using), and Worcestershire sauce. Whisk until smooth and heated through. Alternatively, microwave in 30-second intervals.
  8. Toss with sauce: Transfer baked cauliflower to a large bowl. Pour warm sauce over and gently toss with tongs until coated.
  9. Serve immediately: Transfer to a platter, garnish with parsley or green onions, and serve with ranch or blue cheese dressing and celery sticks.
