  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 tbsp granulated sugar
  • 2 tbsp unsalted butter, melted
  • 3 to 3 ½ cups all-purpose or bread flour
  • 1 ½ tsp salt
  • 4 cups water (for boiling)
  • ⅔ cup baking soda
  • Coarse sea salt (for topping)
  • 2 tbsp butter (for dip)
  • 2 tbsp flour (for dip)
  • ½ cup lager or pilsner beer
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • Pinch of cayenne pepper

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add melted butter and salt to the yeast mixture. Gradually add flour, mixing until a dough forms.
  3. Knead the dough for 5-7 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise in a warm place for 1 hour until doubled.
  5. While dough rises, bring 4 cups of water to a rolling boil in a large pot. Stir in baking soda carefully.
  6. Punch down risen dough and divide into 12-15 pieces. Roll into ropes and tie into knots or leave as balls.
  7. Boil pretzel bites in the baking soda water for 30 seconds per side. Remove with a slotted spoon.
  8. Place boiled pretzels on a parchment-lined baking sheet. Sprinkle with coarse salt if desired.
  9. Preheat oven to 425°F (220°C). Bake pretzels for 12-15 minutes until deep golden brown.
  10. For the dip, melt butter in a saucepan. Whisk in flour and cook for 1 minute.
  11. Slowly whisk in beer, then add mustard, garlic powder, and cayenne.
  12. Reduce heat to low and stir in shredded cheese until melted and smooth.
  13. Serve warm pretzel bites immediately with the hot beer cheese dip.

Notes

Ensure water is between 105°F and 115°F to activate yeast without killing it. Do not confuse baking soda with baking powder for the boiling bath. Freshly shred cheese for best melting results. If your kitchen is cold, allow extra time for the dough to rise. Leftovers can be refrigerated for 3 days and reheated in the oven.
