  • 1/2 cup buffalo sauce (like Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey (optional)
  • Ranch or blue cheese dressing, for dipping
  • Fresh chives or parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 450°F (232°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash the cauliflower and cut it into bite-sized florets (about 1 to 1.5 inches wide). Pat them very dry with a clean kitchen towel or paper towels.
  3. In a large mixing bowl, whisk together the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Slowly pour in the milk while whisking continuously until you have a smooth, thick batter (consistency of thin pancake batter).
  4. Add the dried cauliflower florets to the bowl with the batter. Gently toss until every piece is evenly coated.
  5. Using tongs, lift each battered floret out of the bowl, allowing any excess batter to drip off. Place them in a single layer on the prepared baking sheet, making sure they are not touching each other.
