  • 2 pounds Yukon Gold potatoes, washed and skins on
  • 12 to 14 slices thick-cut bacon
  • 1 large yellow onion, finely diced
  • 1/2 cup apple cider vinegar
  • 1/4 cup vegetable oil
  • 2 tablespoons granulated sugar
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Fill a large pot with water, add salt, and bring to a rolling boil. Add whole potatoes and cook for 15-20 minutes until tender but firm. Drain and let steam for 5 minutes.
  2. While potatoes boil, cook bacon in a large skillet over medium heat for 4-5 minutes per side until deeply browned and crispy. Transfer to a paper towel-lined plate and leave rendered fat in the pan.
  3. Reduce heat to medium-low and sauté diced onions in the bacon fat for 3-4 minutes until soft and translucent.
  4. Add apple cider vinegar, vegetable oil, sugar, and Dijon mustard to the pan. Whisk vigorously to scrape up browned bits and simmer until sugar dissolves. Adjust seasoning.
  5. Chop the crispy bacon into bite-sized pieces.
  6. Cut boiled potatoes into halves or quarters and place in a large mixing bowl. Pour the hot dressing over the warm potatoes and let sit for 2 minutes to absorb.
  7. Gently fold in the chopped bacon and fresh parsley. Serve warm.

Notes

Serve warm to allow potatoes to absorb the dressing. Do not overcook potatoes or they will become mushy. Ensure bacon is crispy before adding at the end to maintain texture. If dressing is too thin, simmer longer; if too thick, add a splash of water.
