  • 1 cup (about 150 grams) roasted red peppers, peeled and roughly chopped
  • 1/4 cup (60 ml) Greek yogurt or cream cheese
  • 2 tablespoons (30 ml) extra virgin olive oil
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 small clove garlic, minced
  • Freshly cracked black pepper, to taste
  • Salt, optional and to taste
  • 1 tablespoon chopped fresh dill or parsley (optional)

Instructions

  1. If roasting fresh peppers, preheat oven to 450°F (230°C). Roast whole red bell peppers on a baking sheet for 20-25 minutes, turning occasionally, until skin is charred and blistered.
  2. Transfer roasted peppers to a covered bowl or plastic bag to steam for 10 minutes. Peel off skins, remove seeds, and roughly chop the flesh. If using jarred peppers, drain and chop.
  3. Let feta sit at room temperature for about 10 minutes to soften. Crumble into chunks.
  4. In a food processor or high-speed blender, combine crumbled feta, roasted red peppers, Greek yogurt or cream cheese, olive oil, lemon juice, and minced garlic.
  5. Pulse mixture until smooth and creamy, about 1-2 minutes, scraping down sides as needed. The texture should be light, fluffy, and spreadable.
  6. Taste and season with freshly cracked black pepper and salt if needed. Add fresh herbs if using and pulse once to combine.
  7. Transfer dip to a serving bowl, drizzle with a little olive oil on top, and chill for at least 30 minutes to let flavors meld.
  8. Serve with warm pita bread, crunchy veggies, or your favorite crackers.

Notes

Let feta come to room temperature before whipping for a silky texture. Use short pulses to avoid an oily or grainy dip. Roasting peppers yourself adds smoky depth but jarred peppers work well if drained properly. Chill dip for at least 30 minutes before serving to meld flavors. If dip is too thick, add a teaspoon of water or more olive oil to loosen.
