  • 2 cups fresh spinach, roughly chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs (basil, oregano, thyme blend)
  • Salt and freshly ground black pepper to taste
  • Optional: red pepper flakes for heat
  • Optional dairy-free substitutions: coconut cream instead of heavy cream, nutritional yeast instead of Parmesan cheese

Instructions

  1. Pat chicken thighs dry with paper towels. Season generously with about 1 tsp salt and 1/2 tsp freshly ground black pepper on both sides. (5 minutes)
  2. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and sear without moving for 5-7 minutes until skin is golden and crispy. Flip and cook the other side for 3-4 minutes. Remove chicken and set aside. (10-12 minutes)
  3. Reduce heat to medium. In the same pan, add minced garlic and sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and stir for 1-2 minutes. (3 minutes)
  4. Pour in 1 cup heavy cream and 1/2 cup chicken broth. Stir gently, scraping up browned bits. Add grated Parmesan cheese and dried Italian herbs. Season with salt and pepper to taste. Let simmer for 3-5 minutes until sauce thickens slightly. (5 minutes)
  5. Stir in fresh spinach and let wilt into the sauce. Nestle chicken thighs back into the pan, skin side up, spoon sauce over them. Cover loosely and simmer gently for 10-12 minutes until chicken reaches internal temperature of 165°F. (15 minutes)
  6. Remove lid and cook uncovered for another 2 minutes to thicken sauce if needed. Adjust seasoning and add red pepper flakes if desired. (2-3 minutes)

Notes

Dry chicken skin thoroughly before searing for best crispiness. Do not overcrowd the pan when browning chicken. Use a 2:1 ratio of cream to broth for a lighter sauce. Simmer sauce gently to prevent breaking. Leftovers keep well for up to 3 days refrigerated; reheat gently with added broth or cream to restore sauce texture.
