Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. Mash ripe bananas in a medium bowl until mostly smooth.
  3. In a large bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract and pumpkin puree until smooth.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  7. In a small bowl, mix 1/4 cup of the banana batter with 1 tablespoon pumpkin puree and a pinch of cinnamon.
  8. Spoon half of the banana batter into the prepared pan. Dollop the pumpkin mixture on top, then cover with remaining banana batter.
  9. Gently swirl the pumpkin mixture into the batter with a knife or skewer to create ribbons.
  10. Bake for 50-60 minutes until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for maximum sweetness. Ensure leavening agents are fresh for best rise. Do not overmix the batter to avoid a dense texture. The swirl technique prevents overmixing while adding flavor pockets. Can be frozen for up to 3 months.
