  • 1 tablespoon brown sugar, packed
  • 1 large egg yolk
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 325°F (165°C). Lightly grease two 6-8 oz ramekins or line bottoms with parchment paper.
  2. In a small bowl, mix graham cracker crumbs, melted butter, 1 tablespoon sugar, and a pinch of salt until it resembles wet sand.
  3. Press the crust mixture firmly into the bottom of each ramekin. Set aside.
  4. In a medium bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and creamy (about 2 minutes).
  5. Add 2 tablespoons granulated sugar, brown sugar, and pumpkin puree. Mix on low speed until just combined.
  6. Add the egg yolk, vanilla extract, pumpkin pie spice, and 1/4 teaspoon salt. Mix gently until uniform.
  7. Divide the batter evenly between the two ramekins. Smooth the tops and tap the baking sheet to release air bubbles.
  8. Bake on a baking sheet for 18-22 minutes, until edges are set but the center still jiggles slightly.
  9. Cool on the counter for 10 minutes, then refrigerate for at least 4 hours or overnight until firm.
  10. Serve chilled with optional whipped cream, toasted pecans, or a dusting of pumpkin pie spice.
