Creamy Slow Cooker Chicken Enchilada Soup

A rich, velvety slow cooker soup that combines tender chicken, smoky enchilada sauce, and melted cream cheese for a comforting, crowd-pleasing meal with minimal prep time.

  • 2 cups cooked chicken, shredded
  • 15 oz jar red enchilada sauce
  • 2 cups low-sodium chicken broth
  • 1 cup frozen corn
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 8 oz block cream cheese, softened and cubed
  • 1/2 cup heavy cream
  • 1 cup Mexican blend or cheddar cheese, shredded
  • 1 fresh or pickled jalapeño, diced
  • Salt and pepper to taste

Instructions

  1. Place diced onion in the bottom of a 6-quart slow cooker.
  2. Add minced garlic, cumin, chili powder, and smoked paprika; toss to coat the onion.
  3. Pour in chicken broth and enchilada sauce; stir gently to combine.
  4. Add rinsed black beans and frozen corn.
  5. Add shredded chicken on top; do not stir vigorously.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  7. About 30 minutes before serving, turn slow cooker to low or keep warm.
  8. Add cubed cream cheese and heavy cream; stir gently until completely melted and smooth.
  9. If soup is too thick, add a splash of broth.
  10. Stir in half of the shredded cheese.
  11. Taste and add salt and pepper if needed.
  12. Serve immediately with remaining cheese and desired toppings.

Notes

For best results, use full-fat cream cheese and soften it before adding. Do not let the soup boil vigorously after adding dairy to prevent curdling. If using raw chicken breasts, cook for the full time and shred with forks. For a lighter version, substitute heavy cream with Greek yogurt added at the very end off the heat. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months (freeze before adding dairy for best texture).
