A comforting, velvety soup made by roasting acorn squash to concentrate its natural sweetness, then blending it with sautéed aromatics, vegetable broth, and heavy cream for a rich, fall-inspired meal.

  • 2 medium acorn squash
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (low-sodium)
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Salt and freshly cracked black pepper, to taste
  • 1/4 teaspoon fresh-grated nutmeg
  • Acorn squash seeds (reserved for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash the acorn squash and cut each in half lengthwise. Scoop out seeds and pulp with a spoon, reserving seeds if desired.
  3. Brush cut sides of squash with olive oil and season generously with salt and pepper. Place cut-side down on the baking sheet.
  4. Roast for 35-45 minutes until flesh is tender and edges are caramelized.
  5. While squash roasts, melt butter in a large stockpot over medium heat. Add diced onion and cook until translucent (about 5 minutes).
  6. Add minced garlic and cook for 1 minute until fragrant.
  7. Scoop roasted squash flesh from skins into the pot. Pour in vegetable broth and bring to a boil.
  8. Reduce heat to low and simmer for 10 minutes to meld flavors.
  9. Remove from heat and blend with an immersion blender (or standard blender in batches) until smooth.
  10. Stir in heavy cream and nutmeg. Blend briefly to incorporate.
  11. Taste and adjust seasoning with salt and pepper. Serve hot, garnished with toasted seeds or a drizzle of cream.

Notes

Roasting the squash is crucial for flavor depth; boiling can water down the taste. If using a standard blender, blend in batches and vent the lid to avoid steam buildup. The soup can be made dairy-free by substituting heavy cream with full-fat coconut milk. Leftovers keep in the fridge for 4 days or freeze for up to 3 months.
