  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • ¼ cup (30g) pepitas (pumpkin seeds), lightly toasted with a pinch of sea salt and ¼ teaspoon cinnamon
  • Pinch of sea salt

Instructions

  1. Toast the pepitas: Heat a dry skillet over medium heat. Add pepitas with a pinch of sea salt and ¼ teaspoon cinnamon. Stir frequently for 3-5 minutes until golden and fragrant. Remove from heat and let cool.
  2. Mix the base: In a medium bowl, combine rolled oats, pumpkin puree, chia seeds, and pumpkin pie spice. Stir to distribute spices evenly.
  3. Add wet ingredients: Pour in milk and Greek yogurt. Add maple syrup and vanilla extract. Mix thoroughly until creamy and thick enough to hold shape.
  4. Divide and refrigerate: Spoon the mixture into 2 to 3 mason jars or airtight containers. Cover tightly and refrigerate overnight or at least 6 hours.
  5. Serve with pepita crunch: Stir oats if needed, then top each serving generously with toasted pepitas. Optionally add extra maple syrup or cinnamon.
